Hamungaya Muscovado Sugar (Mascobado) 500g / 1kg — Classic Fine Premium Dark Chunks | Pure Unrefined Raw Cane Sugar from Antique | Moscovado Brown Sugar for Baking & Coffee

Hamungaya Muscovado is traditional Filipino muscovado sugar made the way it has been made in Belison, Antique since our family started the farm in 2003. Fresh sugarcane juice is slow-cooked in open vats over wood fire, stirred by hand by our maestros, and worked until it turns into the rich, dark sugar our province is known for. Nothing is bleached or stripped out. What you taste is the cane itself. Our farm runs across roughly 40 hectares and supports around 100 families every milling season. When you buy from us, you are buying straight from the farm that made it — not from a repacker.Choosing your gradeWe sieve our moscovado into five grades, so you can pick exactly what your kitchen needs.Premium — our most finely sieved grade. The lightest texture and smoothest melt we produce. For when you want muscovado flavor without any grittiness.Fine — sieved for a smooth, even grain that dissolves quickly. Good for coffee, milk tea, and batters where you want the sugar to blend in fast.Classic — our everyday, all-purpose grade. Soft and slightly moist, with the fullest molasses flavor. Best for baking, cooking, kakanin, champorado, and sweetening sauces or marinades.Dark — the darkest sugar we make. Deep mahogany in colour, coarse and caramel-heavy, with the most intense flavour of all our grades. Made by crushing our chunks to open up the dense caramelised centres. For gingerbread, fruitcake, rich braises, BBQ sauces, and anywhere you want the muscovado to be unmistakable.Chunks — the natural whole lumps that form during cooking, left unbroken and still coated in the fine Premium and Fine powder they're sieved alongside — which is why Chunks looks lighter than our Dark grade even though it's the less-processed of the two. Rustic and firm. Traditionally shaved or dissolved slowly, and a favourite for those who grew up with panutsa.A note on colourOur Premium looks lighter than our Classic, and that is exactly how it should look. Sieving separates out the coarse, molasses-heavy particles and leaves the finest crystals behind — so the finer the grade, the lighter it appears. Nothing is bleached and nothing is added at any stage. The colour difference is simply the sieve doing its work. If what you want is the darkest, strongest sugar we make, choose our Dark grade.SizesChoose 500g for trying a grade or keeping a smaller supply, or 1kg for regular use. The 1kg pack gives better value per kilo.StorageKeep in a cool, dry place in a sealed container. Natural muscovado holds moisture, so clumping is normal — it does not mean the sugar has spoiled. Just break it up with a spoon or fork.ShippingWe ship from Antique via J&T, SPX, and Roro freight depending on your location. Orders are packed fresh and dispatched within our stated handling time.
