As a true Chaoshan local, I always go for Puning fermented bean paste! This one smells richly savory but not overpowering right when you open it. It's got that tempting golden color, and the bean paste itself has whole, plump beans, no mushy clumps. The ingredients list is super clean, no extra additives, and it tastes savory and fresh with a natural sweetness from the soybeans, not too salty at all. I use a spoonful when steaming fish, and it makes the fish extra sweet and removes any fishiness; adding a little when stir-frying water spinach or kale makes the veggies instantly fragrant and refreshing; and dipping poached chicken in it? That's a classic for a reason!

Puning bean paste stir-fried lettuce is so fragrant! The bean paste is salty and fresh, and the lettuce is crisp and tender. Stir-fried quickly over high heat, it has plenty of wok hei and is more flavorful than plain stir-fry. It's a perfect dish for rice.
